Blueberry Kale Acai Bowl

Happy National Acai Bowl Day! I know I’m going a little overboard with the acai bowl recipes, but since Sambazon has declared April 6th an official day to celebrate the superfood dish, how could I not post one?

This particular bowl is packed with an all-star line-up of superfoods: acai, kale, hemp protein, blueberries, flaxseed—the gang’s all here.

Ingredients

  • 1 frozen unsweetened acai smoothie pack
  • 2 cups packed red kale
  • 1 cup blueberries
  • ¼ cup almond milk
  • 1 banana
  • 2 tbsp organic hemp protein powder
  • 2 tbsp flaxseed
  • ¼ cup granola (I used maple harvest granola from Whole Foods)

Blend everything together except for half the banana and the granola. Top with those remaining two ingredients.

    • In the frozen fruit section of Whole Foods! I think you can also find it at some Stop & Shop locations, too.

    I would recommend looking for a frozen acai puree that does not have soy lecithin in it. There are some really good options available online if you can’t find in your local health food store or grocer. I recommend Amafruits at http://www.amafruits.com. They have great organic acai purees, very dark (ie. more antioxidants) and thick (ie. more acai).

      Aw thanks! I use a Breville. It’s great but I still dream of the day I can afford a Vitamix :)
