This week has been (and will continue to be) absurd. I’m moving into a new place September 1, but am going out of town for Labor Day weekend, so I have to first move all my junk into a halfway house by tomorrow morning, then move it all again into my new place when I get back next week (I know, cry me a river, I’m self-inflicting this stress by insisting on going away). And as if that isn’t inconvenient enough, there’s road work going on directly in front of my building (which is also under construction), totally blocking me in. It’s so terrible that the whole situation is almost funny. Almost.
With this circus going on, making myself anything remotely intricate in the kitchen has been totally out of the question. These pistachio date bites rolled in hemp seeds are the absolute perfect snack—delicious, sweet and simple. When I’m stressed, my sweet tooth gets a little aggressive, and the dates are a healthier way to satisfy that (as opposed to taking a pint of ice cream to my face). They’ll also be a great snack to bring along on the car trip tomorrow!
A simple snack bite recipe with only three ingredients!
- 1/2 cup pistachios (shells removed)
- 15 dates
- 3 tbsp hemp seeds
- Put the dates and pistachios in a food processor and blend until fully combined.
- Using a tablespoon, scoop out portions of the mixture, pressing them firmly into small balls.
- Roll in the hemp seeds.
- Refrigerate for a couple hours (will make the balls a little harder and easier to eat) or enjoy right away.
If your mixture isn't sticky enough to hold a ball shape, add a tbsp of honey to your food processor.
You can try a variation of these with just about any nut—I bet almonds would be a great swap, maybe even with a spoonful of almond butter mixed in!
