It’s so weird how drastically taste buds can change as you grow older. You couldn’t have paid me to eat a beet when I was a kid (well, maybe if you had offered me the entire American Girl Doll collection…), but now they’re one of my favorite vegetables—especially for juicing.

Beet Lemonade Juice 

Beet Lemonade Juice

Yield: 1 16-oz glass

Beet Lemonade Juice


  • 2 beets
  • 1 lemon
  • ½ cucumber
  • 1 green apple
  • 4 big handfuls of spinach


  1. Scrub the beets.
  2. Run all ingredients through your juicer.

  4. How do you prepare the beets for your juice? And have you ever tried using canned beets instead for it?

    • I rinse off the beets beforehand, but that’s it–then I just toss ’em in, greens and all. And I only use fresh produce for my juices, but canned beets are great for cooking and baking!
