This soup is a great option if you’re meal prepping for the week. It’s delicious served warm and cold, takes only 15 minutes to make, and stores well in the refrigerator. You can top it with croutons, plain popcorn (trust me—it’s delicious) or, as I did in these pictures, toasted coconut chips.
