DIY Taco SeasoningJust popping in quickly today to share this “recipe” for a Mexican spice combo perfect for seasoning tacos, fajitas, etc. I mentioned in my meal prep post last week that I forgot to pick up a packet of taco seasoning for the chicken I was going to make in my crockpot so I whipped up my own. Obviously buying the mixture is way easier, but if you’re ever in a pinch, just combine the spices you already have in your pantry!

Holy tacos, Batman! These chipotle roasted cauliflower tacos are ridiculous. Once you have the chipotle sauce (recipe posted on Sunday) they’re super easy to make and you can customize them with your favorite tacos fillers. Between the chipotle sauce and the seasoning for the roasted cauliflower, the flavor is out of this world. Make these for Cinco de Mayo, Taco Tuesday or any day of the week.

Look at that beautiful beast of a taco. This recipe produced six tacos for me, as mentioned above, but as you can see, I made them pretty big. If you’re using smaller tortillas, you could easily get eight or more from the recipe. If you have leftovers, you can absolutely store them in the refrigerator for a few days. I’d recommend keeping the ingredients stored in separate containers for the best results.

Unless you drown the tacos in it, you’ll definitely have chipotle sauce leftover. Use it as a dip or in a Buddha bowl if you run out of the chipotle roasted cauliflower tacos before the sauce.

This spicy baked tofu recipe is easy to make and pairs so well with my dairy-free chipotle sauce. Add it to a burrito bowl or buddha bowl for a filling, delicious plant-based meal. Ingredients are fairly minimal. You need extra-firm tofu, olive oil, spices and corn starch. The corn starch is going to give your tofu that perfect crispy outer layer.

Spicy Baked Tofu

It’s really important that you use extra firm tofu for this recipe. This way the squares will hold up and you’ll get that crispy outer layer. I’m starting to see pre-pressed tofu in grocery stores (it comes in more of a shrink wrap package vs. a hard square container), which is the firmest tofu I’ve found. For this recipe, however, I’m using regular extra firm tofu from Nasyoa and it works just fine.

If you don’t have the exact spices called for on hand, any taco seasoning mix will work. I’ve also added a tbsp of hot sauce to the recipe with good results. And while the texture isn’t as good, I have made this without the cornstarch when I haven’t had any in my kitchen, and it still works. You don’t get that even outer crunch like with the cornstarch, but it will suffice in a pinch!
