Slow Cooker Corn Chowder (Dairy-Free)

Yield: 6-8 servings

Slow Cooker Corn Chowder (Dairy-Free)

This easy slow cooker corn chowder is made with under 10 ingredients and no dairy!

Ingredients

  • 6 ears of corn (remove the kernels) or 6 cups corn if you're using frozen
  • 4 heaping cups yukon potatoes (chopped into 1/2" cubes)
  • 1 cup diced yellow onion
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt + pepper to taste (be generous with both)
  • Chives for topping (optional)

Instructions

  1. Prepare the ingredients. Shuck the corn and remove kernels, wash and chop the potatoes, dice the onion.
  2. Add all ingredients to the slow cooker.
  3. Cook on high for 4-5 hours or low for 7-8 hours.*
  4. Transfer 3/4 the soup to a blender. Blend and then mix back into the remaining 1/4.**
  5. Enjoy! Store leftovers in an airtight container in the refrigerator.

Notes

*In my slow cooker (which is old) it takes 5 hours on high. Definitely check yours after 4--the main thing is you want the potatoes to be soft. **I don't blend part of it because I like having some potato chunks and corn kernels in every bite. If you want a smooth consistent texture, blend all of it.

Easy Slow Cooker Butternut Squash Soup

Yield: 6-8 servings

Easy Slow Cooker Butternut Squash Soup

Ingredients

  • 1 large butternut squash (pitted, peeled and chopped)
  • 2 large apples (peeled, cored and chopped), I used Honeycrisp
  • 1 yellow onion (peeled and diced)
  • 4 large carrots (cleaned, stems removed and chopped)
  • 4 large stalks celery (cleaned, ends removed and chopped)
  • 1 box low-sodium vegetable broth (about 4 cups)
  • 2 cloves garlic, peeled and minced
  • 1/2 - 1 tsp nutmeg
  • Salt and pepper to taste (I usually am super generous with the pepper!)

Instructions

  1. Put everything in the slow cooker on high for 3-4 hours or low 6-8 hours. Squash should be soft and easily squished with a fork.
  2. Transfer to a blender (you'll probably have to do this in two batches) and blend until fully combined. If you have an immersion blender, it'd probably be easier to use that right in the slow cooker.
  3. Serve warm. I like to top mine with croutons and parmesan cheese!

Before I get yelled at for classifying this as vegan and gluten-free, yes, I’m aware that the cheese and croutons in the pictures don’t fall into that category. I’m just talking about the soup itself. 🙂 If you meal prep each week, this is an awesome one to add to your plan! It makes a huge batch of soup that you can store in the refrigerator and reheat all week long for a quick lunch, dinner or snack.

Coconut Pea Soup (Vegan)

Yield: 9 cups

Coconut Pea Soup (Vegan)

A super easy vegan pea soup made with coconut milk.

Ingredients

  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 3 cups vegetable broth
  • 4 cups peas (frozen or fresh)
  • 1 cups canned coconut milk (get the full fat stuff!)
  • Juice from 1 lime
  • Salt and pepper to taste

Instructions

  1. If you’re using frozen peas, let them thaw.
  2. Heat a soup pot over medium heat with some olive oil (1-2 tbsp will do). Simmer the onion and garlic in the olive oil until soft.
  3. Add in the vegetable broth and bring to a simmer.
  4. Add in the peas and let simmer for 5-6 minutes. If you leave the soup simmering for too long at this stage, the peas will lose their bright green color (it will still be yummy—just not as pretty). Remove the pot from heat.
  5. Place the soup in a blender and add in the coconut milk and lime juice. Blend until smooth. You can do this in batches if your blender isn’t big enough. Sprinkle in some salt and pepper to taste when fully pureed.
  6. You can eat the soup warm or chill it in the fridge for 1 hour. I prefer most soups cold so I like this option.

This soup is a great option if you’re meal prepping for the week. It’s delicious served warm and cold, takes only 15 minutes to make, and stores well in the refrigerator.
