Pineapple Avocado Salsa (Perfect Fish Topping!)

Pineapple Avocado Salsa (perfect to serve over fish!) -- customize this recipe with your favorite fruit combosThis tropical salsa is a super easy way to take a boring fish dinner to the next level, and it’s totally customizable. One week try it with the pineapple and kiwi combo I’m using today—next week switch it up with mango and some jalapeño. It’s one of those recipes where measurements and following the ingredient list don’t really matter. In other words, this is basically not even a recipe. Enjoy! Pineapple Avocado Salsa (perfect to serve over fish!) -- customize this recipe with your favorite fruit combos Pineapple Avocado Salsa (perfect to serve over fish!) -- customize this recipe with your favorite fruit combos

No-Bake Chewy Granola Protein Bars

No-Bake Chewy Protein Granola BarsAs I mentioned when I posted that sweet potato veggie burger recipe, I’ve been on a kitchen mission lately to recreate things I regularly buy. It saves money, and it means I know exactly what is in everything I’m eating—always a nice bonus. I try to eat as little pre-packaged food as possible, but it can be tough to avoid the convenience of granola and protein bars when I’m running around in between teaching classes, getting in my own workout, and working on the blog. There are some wholesome, real-food bars out there, but for the most part, reading the ingredient labels on those things is like reading a chemistry equation. Why not just make my own? Can’t be that hard, right? Right! These are super easy. No-Bake Chewy Protein Granola BarsNo-Bake Chewy Protein Granola Bars [amd-zlrecipe-recipe:54]No-Bake Chewy Protein Granola BarsNo-Bake Chewy Protein Granola BarsNo-Bake Chewy Protein Granola Bars

As you’ve probably noticed, I’m not a huge animal-product consumer. The protein powder I used in these bars was introduced to me by a BTone client—Healthy Skoop is plant-based, and I’m really liking it! I admittedly don’t supplement my diet very often, but when I do make a morning smoothie or a recipe like this, the vanilla Healthy Skoop has been great. If you want to try it out, you can use the code PUMPS15 to get 15% off any purchase through 2/28/15 (excludes the super sampler).No-Bake Chewy Protein Granola Bars No-Bake Chewy Protein Granola Bars

Do you use plant-based protein powder or stick to whey? What’s your go-to brand? How about protein bars—what brands do you like?

Hope all you Northeast readers are staying warm and enjoyed the snow day yesterday!

Chickpea Chocolate Chip “Cookie Dough” Bites

Chickpea Chocolate Chip "Cookie Dough" Bites (gluten-free, dairy-free, vegan, no added sugar)These chickpea chocolate chip cookie dough bites are proof that clean eating can still be delicious…and make you fat (I dare you to not eat the entire batch of these in one day). 😉

I needed something to help wean me off my ridiculous Starbucks cake pop addiction (I’m on week three of cake pop sobriety; working the 12 steps; taking it one day at a time; feeling great), so I decided to experiment with vegan, gluten-free, bite-sized treats using no added sugar. It took a few rounds of tweaking—the first batch tasted like…chickpeas—but I think I finally nailed this one. I got the idea from this chickpea cookie dough dip recipe I kept seeing on Pinterest.

If you’re looking for more of a snack versus dessert, skip the outside chocolate coating. If you’re trying to satisfy a sweet tooth, go for the gold—dip your bites in melted chocolate, pop in the refrigerator to let the outer shell harden, and then say hello to your new favorite food.

I’ll be tan, bloated, in need of a green juice and a workout, but ready to respond to all the comments and emails you’ve left while I was gone. 🙂

P.S. Sorry I went completely overboard with pictures of these guys. I felt like a mom picking a favorite child—I just couldn’t decide!
