Mango, Avocado & Shrimp Spring Rolls with a Peanut Dipping Sauce

Mango Shrimp Spring Rolls with Peanut Dipping SauceIf you’ve been a longtime reader of P&I (I’m talking Day 1, Ride-or-Die reader), you may remember this recipe. I shared it when my blog was still a baby and, as with all early posts, it wasn’t my–errr–finest work. The photography was awful, but the recipe was also in need of tweaking.  Mango Shrimp Spring Rolls with Peanut Dipping Sauce
Guys. I’m SO EXCITED to share this recipe makeover! The shrimp is prepared in a better way, and the sauce is uh-mazing. It’s inspired by The Minimalist Baker’s Cashew Dressing (LOVE that blog if you haven’t check it out) and it brings the flavors of the rolls together perfectly.

For a little trip down memory lane, check out some of the pictures from the original post four years ago. Lighting? What’s that? And are those beer shot glasses in which I’m “artistically” displaying my sauces?? Good lord.signature

  1. These mango, avocado and shrimp spring rolls are lovely and your sauces sound absolutely delicious. I think they look really stunning and your photographs could grace Freshly Pressed any day! Thanks for sharing the great recipe

  2. How long do these last for you? I would love to make a bunch of them ahead of time for work, but I don’t want to waste ingredients… they look amazing!

    • I’ve never tried to save them, but my one concern would be the avocado turning brown (which would happen over night). The rice paper might also start to get soggy after a couple days. But they are delicious so don’t let that stop you from making them! 🙂

  3. These spring rolls look amazing and the peanut sauce too. Great recipe. Thank you for sharing. xo Lauren

  4. haha i made these exact rolls (sans mango) and posted them about a year ago. the photography is on par with your initial ones – dimly light, weird looking peanut sauce drizzle…. i can’t wait to redo them haha.
these look absolutely delicious tho! i’ll sneak some mango in mine next time 🙂

  5. Nicole! I made this for my kids and they absolutely loved it. Always a treat to have a healthy dinner that they actually enjoy. Plus it’s quick to make. Time for you to start your “healthy & quick dinners for your family” cookbook.
